- 1 Cup Shredded coconut Lightly toasted
- 1 Cup Dates Pitted
- 1/4 Cup Chocolate Chips Melted (I used semi sweet)
- 1 tsp Coconut oil Optional, for melting chocolate
Instructions
- Begin by adding the coconut and dates to a food processor. Mix well until mixture is sticky and can form perfect cookies.
- Form each one into a cookie, flatten, poke a hole through each one, and stick in freezer for 10 minutes.
- Melt the chocolate with a little coconut oil (optional) and dip each cookie on one side. Finish off by drizzling chocolate on the top and stick in the freezer for another 10 minutes to allow chocolate to harden. Serve.
